I tried something new tonight... It turned out fantastic!
I found a recipe on Pinterest for a lemon chicken that seemed good, but when I started making it, something seemed to be missing, so I started messing around with it. As I finished it, I questioned it a little because I am not really a Lemon lover, my husband is and that is mostly why i wanted to make it, but when It was all done I found myself going up for seconds.
Ingredients:
- 2 Lemons
- 1 Tablespoon minced garlic
- 4 tablespoons of Extra Virgin Olive Oil
- A Packet of Good Seasons Italian Seasoning
- Parm Cheese Grated
- 4 boneless, skinless chicken breast
- 14.5 can of french style cut green beans
- 2 cups of quartered small red potatoes
Directions:
- Pre-heat oven to 400 degrees
- Drizzle some Extra Virgin Olive Oil on the bottom of your pan (about 2 tablespoons give or take)
- Slice one lemon and put it on the bottom of your pan
- Juice your other lemon and place in a mixing bowl
- Mix together your lemon juice, garlic, 2 tablespoons of olive oil, Italian Dressing packet and Salt and pepper to taste
- Place the green beans on top of the lemons, then take your quartered potatoes and put them around the sides of pan.
- Take the chicken and dip it into your mixture then put it in the middle of the pan
- Drizzle the remainder of the mixture on top of everything
- Sprinkle Parmesan Cheese over top of everything
- Place in oven set at 400 for 1 hour (TIP: at the end of the hour, I placed the oven on broil for about 5 mins just to crisp the top because I like things crispier, so i definitely recommend that if you like things that way!)
- Enjoy!
I really enjoyed this dish and so did my husband. I hope you like it as much as we did!
