Goat Cheese Bruschetta

Love Goat Cheese?
Love Bruschetta? 
Then you are going to love this recipe! Plus the best part....it's super easy

Ingredients: 
  • 1 Large Tomato Diced
  • 1/4 a sweet onion Diced
  • 1/2 Tablespoon Garlic
  • 1 1/2 tsp Oregano 
  • 1/2  tsp Basil 
  • 1 tsp Parsley 
  • Italian Bread sliced 
  • Goat Cheese (spreadable) 
  • Parmesan Cheese Shredded or Mozzarella 
  • Balsamic vinegar

Directions: 
  • Preheat oven to 400 degrees
  • Mix together the diced tomatoes, diced onion, garlic, oregano, basil and parsley in a mixing bowl and set a side
  • Spread the goat cheese on to the bread and set on a cookie sheet
  • Take your tomato mixture and spread it onto the bread
  • Sprinkle shredded parm cheese on top
  • Place in oven for 8 mins
  • After baking drizzle balsamic vinegar on top


















This is a great appetizer for parties or a small snack. YUMMMM!!! 

Italian Lemon Chicken

I tried something new tonight... It turned out fantastic!
I found a recipe on Pinterest for a lemon chicken that seemed good, but when I started making it, something seemed to be missing, so I started messing around with it.  As I finished it, I questioned it a little because I am not really a Lemon lover, my husband is and that is mostly why i wanted to make it, but when It was all done I found myself going up for seconds.

Ingredients:

  • 2 Lemons
  • 1 Tablespoon minced garlic
  • 4 tablespoons of Extra Virgin Olive Oil
  • A Packet of Good Seasons Italian Seasoning 
  • Parm Cheese Grated
  • 4 boneless, skinless chicken breast
  • 14.5 can of french style cut green beans 
  • 2 cups of quartered small red potatoes



Directions:

  • Pre-heat oven to 400 degrees
  • Drizzle some Extra Virgin Olive Oil on the bottom of your pan (about 2 tablespoons give or take)
  • Slice one lemon and put it on the bottom of your pan 

  • Juice your other lemon and place in a mixing bowl
  • Mix together your lemon juice, garlic, 2 tablespoons of olive oil, Italian Dressing packet and Salt and pepper to taste
  • Place the green beans on top of the lemons, then take your quartered potatoes and put them around the sides of pan.
  • Take the chicken and dip it into your mixture then put it in the middle of the pan
  • Drizzle the remainder of the mixture on top of everything

  • Sprinkle Parmesan Cheese over top of everything
  • Place in oven set at 400 for 1 hour (TIP: at the end of the hour, I placed the oven on broil for about 5 mins just to crisp the top because I like things crispier, so i definitely recommend that if you like things that way!)

Hungarian Hot Stuffed Peppers

If you were to come over and look in our fridge, chances are there are going to be at least three different types of peppers in there...if not more.  Peppers are a must in our home, we love them and are always trying to find different ways to use them.  A few years back, my husband had tried a stuffed Cubenelle dish somewhere that he liked but felt that there was something missing. So he came home a took what was in our fridge and tried to copycat the recipe but with a few changes.  What he came up with has been a staple in our home ever since and is even requested when we have get togethers or go to parties.  For this recipe we use Hungarian Hot peppers because we like the heat, but we have also tried it with cubanelle peppers too and that is also very tasty with less heat.

Ingredients:
  • 8 Large Cubanelle or Hungarian Hot Peppers
  • 1 tube of Bob Evans Zesty Hot Sausage
  • 1 Bag of Sargento Chipotle Cheddar Shredded Cheese
  •  Parmesan Cheese
 Instructions:
  • First clean out the peppers and rinse so there is no seeds left in them
  • Brown the sausage 
  • Once sausage is browned, add cheese and mix until the cheese and meat are molded together
  • Stuff the peppers with the meat mixture
  • Put in a oven safe dish and bake at 350 degrees for 20-30 mins 

  • After 20-30 mins, place the oven on low broil and put peppers back in for 5-10 mins or until a little blackened.

  • Take out of the oven, sprinkle with parm cheese and Enjoy!!! 

 We like to have ours with spaghetti but they are also very good plain or red sauce on top.
